Holiday Happy Hour!

Coquito (Traditional Tropical Eggnog)
4 egg yolks (Organic free range)
2 cans of coconut milk
1 can of condensed milk
1 can of evaporated milk
1 cup of coconut rum
1 1/2 cup of 10 Cane rum
1 cup of 151 proof rum
1 vanilla bean
cinnamon sticks
Separate the egg yolks from the whites and place in a large sauce pan. Stir up the yolks until smooth but do not whip. Stir in the evaporated milk. Once mixed add the condensed milk. Mix until smooth. Add the coconut milk and simmer on low heat. Use a thermometer, do not let the temp exceed 138 degrees. Split the vanilla bean length wise with a knife and slide the back side of the knife down the bean to remove the inside and stir in. Now add the rum slowly and stir while mixing. Let the mixture cool and place in clean glass bottles. Add one cinnamon stick per bottle and refrigerate. Yield: 1.5L.
“I actually cut it in half for you—If you would like you can double up the recipe,” notes Rafael Tenjo, Liquid Engineer. “The coquito will stay good in the fridge for up to 2 months. In my house it doesn't usually last that long. You can also adjust the strength of the rum to taste. Be careful, this mixture hides its potency well." (Recipe provided by Rafael Tenjo, Liquid Engineer).

Whatcha Eatin' Wednesday: Morels and Asparagus

Wondering what to do with all of those delicious morels that you saved? Bill More from Your Secret Chef has just the answer!

Wild Morels and Asparagus
Ingredients:
1/4 - 1/2 oz dried wild morels
1/4 cup butter
1/2 cup shallots, chopped
1 lb white button mushroom, sliced
1-1/2 lb asparagus, cut into 1 1/2in pieces
1/4 cup heavy cream
1 tsp fresh chives, finely chopped
salt and pepper

1. In a bowl cover morels with very hot water; soak until soft, about 20 min. Drain and reserve soaking liquid. Cut morels in half, clean insides if needed.
2. Melt butter in a large skillet over medium-high heat; when butter is hot and foam has subsided, add shallots, morels and button mushrooms. Cook until shallots soften and fresh mushrooms have released their liquid and it has cooked off, about 10min.
3. Add asparagus and 1/2 cup reserved liquid to pan. Bring liquid to a boil, cover, reduce heat so mixture simmers, and continue cooking for another 2 to 4 minutes, or until asparagus is crisp-tender. Add cream and chives and continue cooking, uncovered, until sauce thickens slightly and asparagus is tender, about 4 minutes more. Season with salt and pepper to taste and serve!

Often we find that the old ways are the good ways, and that can definitely be said when it comes to music and how we absorb it. There is a local musician who is doing something rather decidedly different these days--releasing his music on vinyl. Jared Bartman, local indie musician and songwriter, chose to release his two song EP on vinyl just last month and it is being received with open arms. It's time to dust off that turntable! Not only was the method of recording a throwback, but the printing of the record sleeve as well. Jared employed a certain Numéro designer for the cover art and chose to have them printed via a vintage Vandercook letterpress--talk about old school. We often hear people talk about raising the bar. We say it is important to set the bar high for our children, both at school and home, because the accepted belief is that they rise to whatever is expected of them. We also like high bars at work. We scorn mediocrity and push for higher and higher productivity, creativity, and production. We reward people when they do well, and punish them when they disappoint. Well-documented recipe for success, right?

It is true that when the expectations we set for ourselves and others are a bit challenging, we strive towards growth and improvement, great ingredients for engagement. I’m not so sure that the reward/punish cycle is quite as effective as we believe or we wouldn’t be seeing such a profound level of discouragement in so many sectors of our society today.

While challenge is an important element for most of us in terms of our enjoyment and long-term satisfaction in our jobs, our relationships, and our personal growth, safety also needs to be in place before a challenge can be accepted. It can be a tender balance, but when an atmosphere of safety is present, it is easier for us to take on the challenges, prepared to make mistakes in order to learn and progress.

Imagine the bar is the one used in the Olympic event, the High Jump. First of all, who in their right minds would attempt the high jump without the big cushiony support providing a safe place to land on the other side? The improvements made to the landing area alone have changed the sport in terms of the strategies high jumpers now use to clear the bar. And here’s another important strategy: in the early rounds, the bar is set moderately low so that the participants can get their muscles and psyches warmed up for the later challenge. The bar is raised only in very small increments each time, building the jumper’s confidence and positive energy to succeed.

What if we used the same idea when setting the bar for others and ourselves? What if we started small and increased the challenge in small increments, training and warming each time so that the new advancement appeared doable rather than overwhelming? What if we acknowledged each new height with support, appreciation, and applause?

Understanding that challenge is a part of life and that we can meet each challenge as it comes, effectively and confidently, is a very important mindset for success. When you are tempted to set the bar high for yourself, your coworkers, or your children, look first at the sense of safety you have created. Do you feel safe to make a mistake, explore many options, experiment, and possibly make a mess in order to conquer the challenge? Do you feel supported to knock the bar right off the pins in order to take yourself and your colleagues, family, or company to the next level of excellence?

Embrace the tender balance of the bar
—allow safety to support each challenge.

You’ve probably experienced the feeling many times. I’ve been here before, right here, living this very moment. It seems faintly familiar and I can’t quite bring the circumstances to mind. It feels like a gauzy shadow is laying over my memory. Even when I really try, I can’t bring the moment into sharp focus, but I feel like I’ve been here before.

Déjà vu. Is it true or only imagined—that momentary familiar feeling of a past occurrence that taps anxiously on memory’s door? You may recognize yourself searching the many drawers and cabinets of your memory’s closet seeking the connection. Is it even about the past or perhaps some strange ability of the brain to pre-imagine this set of circumstances occurring in the future, thus making it feel as though it already happened?

Reliving meaningful experiences can bring us comfort. People are pattern makers, so it makes sense that we repeat things over and over again because we like the feelings they invoke. We revisit places, persons, and things to put us in a certain frame of mind, or maybe to bring resolution to a past conflict.

When we have a good experience at a restaurant or a vacation destination, we want to go back. Experiencing things again can give us a new appreciation and create a nostalgic connection. A young man brings his girlfriend back to a place filled with romantic significance as the stage for his proposal. A couple plans their second honeymoon at the place of the original getaway, hoping to rekindle the feelings of ardent love and connection they felt years ago. Often the idealized experience we are seeking to replicate doesn’t feel the same as we remembered and yet, for better or worse, we remain loyal, familiarity and hope compelling us to return.

The experience of déjà vu is all about awareness. You’ve probably read a word you’ve never seen before and then suddenly noticed that same word showing up the very next day. Or you’ve seen a new style of car on the road and then see it again everywhere you look. According to Maturana and Varela, whose work in brain cognition is sited in A Simpler Way (Wheatley and Kellner-Rogers, 1999), our eyes are not the only source of information relayed to the brain. What we see through our eyes only accounts for 20 percent of what we use to create perception. The other 80 percent comes from information that is already in the brain. “We each create our own worlds by what we choose to notice, creating a world of distinctions that makes sense to us,” say Maturana and Varela.

Remembering and revisiting times past so we can relive those shiny moments of significance in our lives can be a tempting and enjoyable pass time. Perhaps a balance point is to stay fully present in our lives right now so that we have lots of material in mind to continue to build memories and experience the mysterious déjà vu.
